Smoked Salmon Souffle recipe

- Ingredients
- 1/4 cup freshly grated Parmesan cheese
- 2 eggs, separated
- 1/4 cup heavy whipping cream
- 1/2 cup slivered smoked salmon
- 1 teaspoon cornstarch
- pinch salt
- fresh ground pepper to taste
- few drops lemon juice.
Preheat oven to 375 degrees. Butter 4 individual Pyrexbowls. Coat bottoms and sides with grated cheese. In a bowl, stir egg yolks, cream, salmon, chives, lemon zest, cornstarch, salt and pepper. With electric mixer beat egg whites with lemon juice until firm. Fold whites into yolk mixture. Fill bowls with mixture and arrange on baking sheet. Place in oven – lower heat to 350 degrees and bake until puffed and golden. (10 minutes). Serve immediately.
