Ingredients
175 g | smoked haddock |
120 ml | milk |
1 | bay leaf |
15 g | butter |
1 tbsp | plain flour |
1 tbsp | lemon juice |
4 tbsp | double cream |
salt and pepper, to taste | |
cucumber slices for decoration |
Instructions
Bring the haddock, milk and bay leaf to a boil in a saucepan, then cover and simmer at a low heat for 10 minutes.Strain and reserve the milk; flake the fish into small bits.
Melt the butter in a saucepan and blend in the flour. Gradually add the reserved milk and bring to the boil, stirring all the time, until thickened.
Remove from the heat and stir in the lemon juice, then fold in the flaked fish.
Whisk the cream until thick and fold into the mixture.
Transfer to two small individual dishes and chill until serving.
Garnish with cucumber slices.
Serving suggestion:Serve with toast or French bread
