Ingredients
200 g | sultanas |
600 ml | milk |
500 g | flour |
42 g | yeast |
1 | egg |
2 tbsp | icing sugar |
50 g | sugar |
1 tsp | salt |
75 g | lard |
Instructions
Cover the sultanas with water and allow to soak for 15 minutes. Heat the milk until lukewarm.Sieve the flour into a bowl and form a well in the middle. Crumble in the yeast. Add 15g of sugar and 125ml of the warm milk. Stir until thickened. Cover and allow to stand at a warm place for 15 minutes.
Drain the sultanas. Add the salt and 35g sugar to the batter. Whisk in the egg and the remaining milk. Whisk until well combined and stir in the sultanas. Allow to stand at a warm place for 30 minutes.
In a pan heat the lard. Add spoonfuls of the batter and fry the pancakes, turning once, until golden.
Serve dusted with icing sugar.
