This is as hearty as chicken chili gets. And, like any good man, this chili gets kickstarted by a nice bottle of beer. Inspired by Evan’s “Fiesta Red Chicken Chili.”

Ingredients
Serves: 16- 1 pound skinless/boneless chicken, rinsed
- 1/2 Vidalia onion, diced
- 1/2 green bell pepper, diced, optional
- 1/2 red bell pepper, diced, optional
- 3/4 bottle amber or light-colored beer
- 1 (64 ounce) can tomato juice
- 1 (10.5 ounce) can tomato soup
- 1 (10.5 ounce) can water (from the soup can)
- 2 (15 ounce) can dark red kidney beans, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can corn, drained and rinsed
- 1 cup medium-spicy salsa of your choice (I like Pace since it runs a tad spicier than most medium salsas)
- 5 to 10 turns of black pepper from a pepper grinder, about 1 teaspoon
- 2 teaspoons cumin
- 1 teaspoon ground red pepper
- 2/3 cup dark brown sugar
Preparation method
Prep: 10 mins | Cook: 8 hours1. Put the beer in a skillet, and bring to a simmer over medium heat. Add chicken, onions, and all bell peppers and cook them (you’re poaching them, if you want to get all fancy cooking term about it), stirring occasionally.
2. Once chicken is cooked through and no longer pink in the middle, about 15 minutes, remove chicken and shred with a fork. Strain the peppers/onions. Transfer to 6-quart slow cooker.
3. Add remaining ingredients to slow cooker and cook on LOW for 8 hours, stirring occasionally.Alternate Method
Cook on HIGH for 4 hours.
