Finish your dinner prep before breakfast. How? With this easy slow cooker recipe. After 8 hours of cooking (when you can be out at work, or on a weekend day trip), come home with warming tortillas as your only pre-dinner chore.

Ingredients
Serves: 12
- 1 (3 pound) boneless pork sirloin roast, cut in half
- 5 (4 ounce) cans chopped green chiles
- 2 tablespoons taco seasoning
- 1 tablespoon ground cumin
- 24 (6-inch) corn tortillas, warmed
- 3 cups shredded lettuce
- 1 1/2 cups shredded mozzarella cheese
Preparation method
Prep: 10 mins | Cook: 8 hours
1. Combine pork, chiles, taco seasoning, and cumin in a 3-quart slow cooker. Cook on Low for 8 to 9 hours, until meat is falling apart.
2. Take pork out of the slow cooker, leaving juices in the pot. Shred, place back in slow cooker, and cook for about 15 more minutes.
3. Stuff tortillas with pork, lettuce, and cheese. Serve.
