- Ingredients
- 3 cups white flour
- 2 1/2 cups sugar
- 1-1/2 cups milk
- 2 Tablespoons poppy seeds
- 1-1/2 teaspoons salt
- 1-1/2 teaspoons baking powder
- 3 eggs
- 1-1/2 teaspoons vanilla
- 1-1/2 teaspoons almond flavoring
- 1-1/2 teaspoons butter flavoring
- 1 cup oil
Combine flour, sugar, poppy seeds, salt, and baking powder in a bowl. With electric mixer, beat eggs, milk, oil, and flavorings. Pour in dry ingredients and stir just until moistened. Fill muffin cups. Bake at 350 degrees. Mini muffins take about 10 minutes; regular size may take 20 minutes. Don’t wait for them to brown or they will be dry. Cool 10 minutes before removing from pan.
Yield:8 dozen mini-muffins or 24 standard.
