Simple Spanish rice recipe I threw together. One of my kids, who is not a fan of Spanish rice, even enjoyed it.
Ready in: 30 mins

Ingredients

Serves: 4
  • 1 1/2 cups water
  • 1 cup uncooked rice
  • 1 can (6 oz) tomato sauce
  • 1/4 cup finely diced green pepper
  • 1/4 cup finely diced red pepper
  • 1/4 cup diced red onion
  • 1 tablespoon chili powder
  • salt and pepper to taste

Preparation method

Prep: 10 mins | Cook: 20 mins

1. Add water to a 10 inch nonstick skillet or pan. Bring to the start of a boil and add the rice and tomato sauce. Reduce heat to medium low and cover. Stir about every few minutes because it will stick.
2. After cooking for 10 minutes add red & green peppers, onion, and chili powder. Continue to stir every few minutes. Taste sauce and add salt and pepper if needed. After rice has absorbed all the liquid its ready to serve.
