Ingredients
Serves: 4- 1 pound small red-skinned potatoes, cut into 1/4-inch slices
- 2 carrots, quartered lengthwise and sliced thinly
- 1 tablespoon plus 2 teaspoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 1/4 cups frozen corn
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 ounces cooked roast beef, cut into 1/3-inch pieces
Preparation method
Prep: 10 mins | Cook: 25 mins1. Fill a pot with salted water, and bring to a boil over high heat. Drop in the potatoes (gently, as splashing yourself with boiling water is not fun). Cook for 6 minutes, then add the carrots and cook for 2 more minutes. Drain the water and run some cold water over the veggies to cool them down.
2. Heat 1 tablespoon olive oil in a large skillet over Medium heat. Cook onion and garlic in oil for about 7 minutes. Then add the rest of the oil and turn heat up to medium-high.
3. Stir in the potatoes, carrots, corn, salt, and pepper. Cook for 10 minutes, until mixture begins to crisp. Add beef and pack the mixture firmly into the skillet. Cook for another 5 minutes. Slice and serve.
