Ingredients
1 large | pumpkin, about 2-3 kg |
1 medium | onion, chopped |
2 l | vegetable stock |
olive oil | |
salt and pepper, to taste | |
For garnishing: | |
double cream | |
fresh parsley, chopped |
Instructions
Remove rind from pumpkin with a sharp knife. Remove seeds and cut into large chunks.Heat oil in a pan over medium heat. Add chopped onion and cook until soft, stirring occasionally. Add a little water when the onion starts to cook properly so that it will not burn.
Add pumpkin chunks and stir well. Then add the stock, stirring gently, and close pot with lid. Leave to cook for 30-45 minutes over medium heat.
Check whether pumpkin chunks have softened. When soft, use an electric hand blender to blend pumpkin chunks. The soup should be smooth.
Add salt and pepper, according to your taste and preference.
To serve, add a dollop of cream and garnish with some fresh parsley.
