A simple, light, and easy to make pasta dish with tomatoes, spinach, and cheese.

Ingredients
Serves: 4- 8 ounces rotini noodles
- 2 tablespoons olive oil
- 1 to 2 cups chopped plum tomatoes
- 2 cups fresh spinach leaves
- 1 cup shredded fresh mozzarella
- 1 cup shredded Parmesan cheese
Preparation method
Prep: 10 mins | Cook: 10 mins1. Bring 6 cups of water to a boil in pot over medium heat. Add your pasta and cook for 7 to 9 minutes.
2. In a skillet, add your olive oil and combine with chopped plum tomatoes. Cook until tomatoes have softened and released their juices, about 5 minutes. Add spinach and cook until softened and wilted.
3. Drain pasta and add to the pan along with the fresh mozzarella and Parmesan. Stir until combined and the cheese has melted. Remove from heat and enjoy.
