Ingredients
350 g | fresh Ricotta cheese |
150 g | icing sugar |
50 g | chocolate chips |
80 g | candied citrus peel |
1 tsp | vanilla extract |
200 g | sponge cake ready-made or use the recipe below |
For the sponge cake: | |
4 medium | eggs, separated |
120 g | caster sugar |
100 g | flour |
1 tsp | vanilla extract |
butter, for greasing |
Instructions
Sponge cake:Combine the egg yolks with the sugar and mix until smooth. Whip the egg whites until very firm and add them to the yolk sugar mix.
Add the flour and the vanilla flavouring.
Bake the sponge cake for 40 minutes at 130°C. Turn out the sponge when cooked and let it cool.
Cassata:
Mix the ricotta with the icing sugar, until creamy. Add the vanilla flavouring. Then add the chocolate chips and candied citrus peel.
Line a small tray with slices of sponge cake, put the ricotta cream in the middle and top with a layer of sponge cake to seal. Refrigerate for at least an hour.
To serve, decorate with icing sugar.
