The Sicilian cassata is a traditional Italian dessert that originated in Sicily. This delicious sweet treat is made with layers of sponge cake, ricotta cheese, candied fruit, and marzipan. The cake is typically soaked in liqueur to add a hint of flavor. Once assembled, the cassata is chilled and then decorated with vibrant icing and additional candied fruit.

Ingredients

350 g fresh Ricotta cheese
150 g icing sugar
50 g chocolate chips
80 g candied citrus peel
1 tsp vanilla extract
200 g sponge cake ready-made or use the recipe below
For the sponge cake:
4 medium eggs, separated
120 g caster sugar
100 g flour
1 tsp vanilla extract
butter, for greasing

Instructions

Sponge cake:
Combine the egg yolks with the sugar and mix until smooth. Whip the egg whites until very firm and add them to the yolk sugar mix.

Add the flour and the vanilla flavouring.

Bake the sponge cake for 40 minutes at 130°C. Turn out the sponge when cooked and let it cool.

Cassata:
Mix the ricotta with the icing sugar, until creamy. Add the vanilla flavouring. Then add the chocolate chips and candied citrus peel.

Line a small tray with slices of sponge cake, put the ricotta cream in the middle and top with a layer of sponge cake to seal. Refrigerate for at least an hour.

To serve, decorate with icing sugar.
