shrimp and asparagus recipe details
Ingredients
250 g | asparagus, trimmed, washed, cut into chunks |
1 tbsp | olive oil |
1 | red bell pepper, seeded, washed, cut into strips |
1 medium | shallot, sliced |
2 clove(s) | garlic, minced |
500 g | shrimp, shelled, deveined |
1 tbsp | fresh dill, chopped |
80 ml | vegetable broth |
Instructions
Heat oil in a large skillet over medium heat. Add asparagus, red bell pepper, shallot and garlic and stir fry for 3 minutes.Add shrimp and dill and stir fry for 2-3 minutes.
Stir broth, cover, cook 3 minutes.
