Ingredients
½ | cucumber, diced |
4 medium | tomatoes, diced |
½ | red pepper, diced |
1 bunch(es) | spring onions, chopped |
170 g | Sirene Cheese, a Bulgarian white brined cheese, grated. (Feta or at a push, Halloumi will substitute) |
½ tsp | salt |
½ tsp | freshly ground black pepper |
oil and vinegar dressing |
Instructions
Dice the cucumber, pepper and tomato into 1cm cubes. Chop the spring onions into 1cm pieces.Mix with parsley in a bowl with the salt and pepper to taste. Mix the oil and vinegar and add in.
Place a portion on each plate in a mound.
Grate the cheese and sprinkle over the top of each mound until it is covered.
Serve, with extra cheese sliced and french bread.
About the recipe:
I was first served this when I was a member of a delegation to Bulgaria as part of a formal dinner! Traditionally accompanied with a glass of Bulgarian Brandy and a glass of water (or so they told me!!)
