Ingredients

1 medium Hokkaido pumpkin, diced
5 tbsp walnut oil
1 tbsp rice vinegar
1 tbsp soy sauce
2 clove(s) garlic, chopped
2 tsp brown sugar
1 tbsp honey
1 tsp herb salt
2 tbsp sesame seed

Instructions

In a large bowl, mix together the oil, vinegar, soy sauce, garlic, sugar, honey and the herb salt. Add the pumpkin dices and mix well. Marinade the pumpkin dices for 3 hours.

Preheat the oven to 150°C.

Divide the marinated pumpkin on a lined baking tray. Sprinkle with sesame seed and bake for 40-45 minutes or until the pumpkin is soft, but still a bit firm to the bite. Check seasoning and correct if necessary.
