- Ingredients:
- 2 Tablespoons butter or margarine
- 4 medium potatoes, peeled and sliced
- 1/2 cup onion, chopped
- 3/4 cup diced ham
- 6 eggs, lightly beaten
- 1 cup shredded Vermont cheddar cheese
In large skillet, melt butter or margarine over medium heat. Add sliced potatoes and cook until almost tender, flipping occasionally. Add onion and continue cooking until onion and potatoes are tender. Reduce heat slightly and add ham and eggs. Cook, stirring frequently, until eggs are set. Sprinkle cheese on top of mixture and cover, cooking just until cheese is melted. Remove from heat and serve.
