Ingredients
1 kg | potatoes, peeled and halved |
1 kg | leek, sliced |
salt and freshly ground black pepper | |
450 ml | milk |
4 | shark catfish fillets |
5 sprig(s) | parsley, chopped |
4 tsp | oil |
25 g | butter |
25 g | flour |
2 tbsp | flour |
300 ml | vegetable stock |
75 g | mustard |
1 dash(es) | sugar |
freshly grated nutmeg |
Instructions
Cook the potatoes in salted water until done.In a pan, heat 1 teaspoon of oil. Sauté the leek. Pour in 250 ml of water and bring to a boil. Reduce the heat and simmer for 3-5 minutes, then season to taste with salt and pepper.
In a saucepan, melt the butter. Add 25 g of the flour and cook stirring for 1-2 minutes. Pour in the stock and 200 ml of milk. Bring to a boil, stirring constantly with a wire whisk. Season to taste with mustard, salt, pepper and sugar. Allow to simmer over low heat for approximately 10 minutes, stirring frequently.
Season the fish with salt and pepper. Turn the fish in flour. In a pan, heat the remaining oil. Fry the fish from both sides for 2-3 minutes over medium heat.
Heat the remaining milk. Drain the cooked potatoes and mash together with the milk. Season to taste with salt, pepper and nutmeg and combine the mashed potatoes with the leek.
Serve the fish with the sauce and the mashed potatoes and leek, sprinkled with parsley.
