Ingredients

200 g | almonds, ground |
150 g | breadcrumbs, fresh |
400 g | sugar, caster |
3 tsp | baking powder |
400 ml | sunflower oil |
300 g | marmelade |
1 | cinnamon stick |
4 | cloves |
8 | egg(s) |
To serve with: | |
300 g | mascarpone |
Instructions
Mix 300g of the golden caster sugar with the almonds, breadcrumbs and baking powder. Squeeze the oranges and lemon to get the zest. Then mix eggs and zest and add sunflower oil. Pour this batter into a 9.5-inch tin and bake for an hour at 180°C.For the marmelade syrup, squeeze the juice from the zested oranges and lemon, then bring to the boil with 100g of the sugar, the cinnamon stick and the cloves. Simmer for three minutes and then add the marmelade. Mix well and remove the cinnamon stick and cloves.
Allow cake to cool, prick the surface, then pour over the syrup. Serve with mascarpone on side of plate.
