Ingredients
8 medium | eggs |
3 tbsp | water |
2 | red bell peppers, diced |
1 | onion, chopped |
4 | tomatoes, diced |
4 slice(s) | ham |
4 slice(s) | toast |
salt and freshly ground black pepper | |
1 tbsp | olive oil |
Instructions
In a saucepan, heat the oil and sauté the onions until lucent. Add the bell peppers and tomatoes. Cover and cook over low heat for 5-10 minutes. Season to taste with salt and pepper. Whisk the eggs with the water and season with salt and pepper. Pour the eggs over the vegetables and cook over low heat without a cover until set.Cover each toast with a slice of ham. Add a spoonful of the Serbian eggs and serve immediately.
