Ingredients
2 tbsp | butter |
4 | eggs |
3 tbsp | sugar |
2 tbsp | semolina, heaped, approx.40g |
½ tsp | baking powder |
5 tbsp | milk |
250 g | curd cheese |
1 tbsp | oil |
1 glass(es) | morello cherries, 720 ml |
½ packet(s) | custard powder, vanilla (to cook; accordant for 1/2 l milk ) |
150 g | plain yogurt |
Instructions
Melt the butter over low heat. Beat the eggs and the sugar until creamy. Fold in the semolina, baking powder, milk and half of the curd cheese.Heat oil in a pan, pour in the batter, cover and allow the pancake to cook for approximately 10 minutes. Cook it over low to medium heat and check occasionally that the pancake does not get burnt.
Drain the cherries and collect the juice. Bring the juice to the boil. Stir the custard powder into 3 tablespoons of water and stir until smooth. Add this to the cherry juice and bring to the boil, stirring. Fold in the cherries and allow the compote to cool.
When one side of the semolina pancake is cooked, turn and bake for approximately 8 minutes on the other side until golden brown.
Mix the other half of the curd cheese with the yoghurt and stir until smooth. Divide the pancake into three and serve with the compote and a dab of yoghurt and curd cheese mixture each.
