seafood chowder recipe details
Ingredients1. Sliced bacon, diced (1/2pound)
2. water (4c)
3. diced peeled potatoes (6c)
4. chopped onion (2med.)
5. bay or sea scallops, quartered (1pound)
6. fresh or frozen lobster, cut into 1 inch pieces (1pound)
7. uncooked medium shrimp, peeled and deveined (1pound)
8. cod or haddock cut into 1 inch pieces (1pound)
9. evaporated milk (1can)
10. milk (2quarters)
11. curry powder (1/2tsp)
12. minced fresh parsley (4tsp)
13. salt (4tsp)
14. melted butter (1/2)
Method of preparation
1. Take a large stockpot, cook bacon in it over medium heat until it gets crispy. Take out the bacon from the pot with slotted spoon to the paper towel and reserve the drippings.
2. Saute onions in the drippings until they get tender. Add potatoes and water and then keep it to boil. Cook for 10 minutes. Now add the scallops, shrimps, lobster, and cod or haddock.
3. Cook them for 10 minutes or until the scallops get opaque, shrimps turn pink and fish gets flake easily with fork.
4. Add butter, parsley, salt and curry powder. Add milk and evaporated milk and heat it well. Garnish it with bacon and then serve it.
