Ingredients1. Fish fillets (4longs 4oz each)
2. whole wheat or multigrain bread (3slices)
3. lemon pepper (3/4tsp)
4. finely chopped celery (1/4c)
5. ground paprika (1/2tsp)
6. nonstick butter-flavored cooking spray
7. finely chopped cooked crab meat (3/4c)
8. chicken broth, divided (1/4c)
9. dried thyme (1/4tsp)
10. finely chopped onion (1/4c)
Method of preparation
1. Take fish, rinse and pat dry it with paper towel and then keep it aside. Make the crumbs of the bread slices in a blender. The crumbs should be 1 1/2 cup. Keep the crumbs aside.
2. Take a non stick frying pan, coat it with cooking spray and place it over medium heat. Add onion, thyme, lemon pepper, celery and 1 tablespoon of broth and then stir it to mix.
3. Cover the pan and cook it for about 3 minutes or until the vegetables get tender by stirring it occasionally. Now take off the pan from the heat, mix the bread crumbs and crab meat into the vegetable mixture. Gently add the remaining broth about 1 tablespoon at a time.
4. Place the fish fillets on the flat surface. Spread the quarter of the stuffing over the bottom half on each fillet. Fold the tops over to enclose the filling and secure each fillet with toothpick.
5. Take a non stick pan, coat it with cooking spray and then place the fillets in the pan. Spray the cooking spray on each fillet and then sprinkle the paprika over it.
6. Bake it uncovered for 20 minutes at 400 degrees F or until the fish gets flake with a fork. When it gets ready then serve it hot.
