Ingredients
Serves: 8- 8 boneless pork loin chops (1 inch thick), pockets cut in each
- 1 small onion, chopped
- 1/2 cup cubed butter
- 5 cups fresh baby spinach
- 1 (6 ounce) package sage stuffing mix
- 1 1/2 cups sour cream
- 1/2 teaspoon rubbed sage
- 1/2 teaspoon lemon-pepper seasoning
Preparation method
Prep: 10 mins | Cook: 40 mins1. Preheat oven to 350 degrees F and coat a 15×10-inch baking dish with nonstick cooking spray.
2. Melt butter in a skillet over medium heat. Cook onion in melted butter for 6 minutes, then add spinach and toss to coat. Cook until spinach is wilted, which should take about 3 minutes, then add stuffing mix, sour cream, and sage. Stir to combine.
3. Stuff each of the pork chops with spinach mixture, close with toothpicks, and place in prepared baking dish. Bake for 35 to 40 minutes, until pork is cooked through.
