Five 5 x 5-inch pastry squares
1 pound ground sausage meat
1 small onion
1 egg
1 Tablespoon water


Chop onion and add to sausage meat. Beat the egg and water together in a small bowl. Roll out pastry squares and shape sausage meat into five “logs.” Place a sausage log at one end of a pastry square and roll. Seal the seam by brushing some of the egg mixture along the seam and pinching the two dough surfaces together. Place the sausage rolls, seam side down, onto a baking sheet and brush pastry with egg mixture. Bake at 350 degrees for 45 minutes. Remove and let cool. Slice rolls into 1/2-inch thick pieces and reheat to order. Arrange slices on a platter and serve with a sherry mushroom sauce for dipping.
