A quick and easy alternative to sausage and pepper sandwiches!

Ingredients
Serves: 4
- 1 1/2 lbs. Sweet Italian sausage
- 4-5 Peppers, mix of red, yellow, and green
- 1 can (large) Whole peeled tomatoes
- 1 Small onion
- 3-4 cloves Garlic
- 1 pinch Salt & pepper
- 1 lbs. Penne pasta
- 1 can (small) Tomato sauce
Preparation method
Prep: 15 mins | Cook: 30 mins
1. In a large skillet fry sausage until browned, slice pepper and onions into thick slices
2. Add peppers, onions, & garlic (can leave whole if you want to remove it before serving) I love garlic so I crush it
3. When peppers and onions are soft add tomatoes, I mash the out of the can but mom likes to do it in a bowl to limit the mess, sauté for 15-20 minutes
4. Add tomato sauce to thicken it or to taste, ad salt and pepper
5. Boil water and cook pasta according to directions
6. Pour pasta in large bowl and cover with contents in skillet
7. Garnish with crushed red pepper flakes and grated cheese
