- Ingredients:
- 2 frozen puff pastry squares, thawed
- 8 ounces shredded sharp cheddar cheese
- 1 small onion, finely chopped
- 4 large roasted green chilies, cut to lay flat
- 6 large eggs
- 1/4 teaspoon fresh ground black pepper
- pinch of red pepper
- pinch of salt (optional)
- water to moisten pie edge
Preheat oven to 375 degrees. Roll out one pastry square to about 1/8 inch thick and place into a 2-quart square baking dish with edges extended over sides. Layer the cheese, onion, and green chilies in the baking dish. Beat eggs; add peppers and salt. Add egg mixture. Roll out second pastry square to size of baking dish and place over top of dish and crimp edges together. Bake for 50 minutes.
