Ingredients
500 g | green asparagus, cut into bite-sized pieces |
1 | onion, chopped |
200 g | rice |
100 ml | single cream |
1 | ripe lemon, juice and grated rind |
4 | salmon fillets |
salt and freshly ground black pepper | |
2 tbsp | oil |
150 ml | dry white wine |
500 ml | vegetable stock |
75 g | butter |
½ bunch(es) | dill, chopped |
Instructions
In a pan heat the oil and sauté the onion. Add the rice and cook until lucent. Pour in the wine, stock and cream. Cook over medium heat for 10 minutes. Add the asparagus and cook for 8 more minutes. Stir occasionally.Preheat the oven to 150°C. Place the fish into a buttered casserole dish. Sprinkle with lemon juice and bake for 10 minutes.
Mix together the lemon zest and the butter. Season with salt and pepper. Drizzle the lemon butter over the salmon and bake for 5 more minutes.
Season to taste the rice with salt and pepper. Sprinkle the salmon with dill and serve with the asparagus rice.
