Ingredients

vegetable oil | |
salt, to taste | |
Ginger glaze: | |
2 tbsp | ginger, freshly grated |
2 tbsp | garlic, minced |
2 tbsp | scallions, finely chopped |
1 tbsp | chilli paste |
120 ml | rice wine vinegar |
60 ml | dry sherry |
2 tbsp | hoisin sauce |
120 ml | water with vegetable stock |
Instructions
Preheat oven to 220°C.In a small saucepan combine all ingredients for the glaze and bring to a boil. Leave to simmer for 30 seconds and remove from heat. Cool to room temperature.
Heat oil in an ovenproof skillet. Season salmon with salt and sear first sides until golden brown. Turn steaks and roast in oven for 3 minutes.
Brush with steaks with ginger glaze and roast for 1 minute more.
Servign suggestion:Serve salmon steaks with potatoes and asparagus, garnished with basil leaves.
