Ingredients
2 stalk(s) | leek |
2 stalk(s) | celery |
2 | carrots |
1 tbsp | butter |
3 clove(s) | garlic |
1 l | fish stock |
2 tbsp | tomatoe puree |
500 g | potatoes, waxy variety |
600 g | salmon fillet, skinless, sliced |
1 bunch(es) | dill, chopped |
salt and pepper | |
4 tbsp | crème fraîche |
1 tsp | horseradish |
Instructions
Clean, wash and chop the celery and the leek. Peel the carrots and cut into thin slices. Peel and dice the potatoes.In a saucepan, heat the butter and sauté the vegetables. Press in the garlic, stir in the tomato purée and cook stirring for a minute. Deglaze with the fish stock, bring to the boil, cover and cook over low heat for 15 minutes or until the potatoes are done.
Add the salmon and cook over low heat for another 3 minutes. Stir in the Crème fraîche and the dill and season to taste with salt, pepper and horseradish.
