Ingredients
1 | onion, chopped |
1 bunch(es) | parsley, chopped |
600 g | salmon fillet, cut into bite-sized pieces |
3 tbsp | lemon juice |
salt and freshly ground black pepper | |
2 tbsp | yellow curry paste |
400 g | mixed vegetables, frozen |
400 ml | fish stock |
100 g | sour cream |
Instructions
Drizzle the fish with lemon juice. Season with salt and pepper. In a pan, heat the oil. Fry the fish briefly until done. Remove from the pan and set aside.Add the onion into the pan and sauté until lucent. Add the curry paste and cook stirring for a minute. Pour in the stock and the vegetables and bring to a boil. Simmer over low heat for 6-8 minutes.
Stir in the cream and the fish and season to taste with salt and pepper. Serve the curry sprinkled with parsley.
