Ingredients
1 medium | leek |
1 bulb(s) | fennel |
2 medium | carrots, peeled |
3 medium | potatoes, peeled |
1 stalk(s) | celery |
100 g | spinach |
1 tbsp | butter |
500 ml | fish stock |
100 ml | white wine |
200 ml | cream |
salt and pepper | |
lemon juice | |
300 g | salmon fillet |
prawns, optional |
Instructions
Finely slice leek, fennel, carrots and spinach. Finely dice the potatoes. Fry all slowly in butter, add stock, wine and cream.Season with salt, pepper and lemon juice. Let cook slowly until vegetables are almost done.
Cut salmon into 2X2 cm pieces and place on top, together with the amount of prawns you can afford, if you choose to use them. Steam until done.
Serving suggestion:Serve with garlic buttered baguette.
