Ingredients

1  cucumber, peeled, halved, seeded and chopped into dices
salt and freshly ground black pepper
225  young carrots, diced
340 g firm potatoes, peeled and cubed
240 g young beetroot, peeled and cubed
340 g cooked chicken breast, diced
225 g ham, diced
6  spring onions, sliced
240 ml mayonnaise
240 ml sour cream
1 tsp dill
1 tbsp parsley
4  4 hard boiled eggs, quartered

Instructions

Heat 3 saucepans. Separately in each pan boil the carrots, potatoes and the beetroots until done. Drain and allow to cool. Tranfer all into a large bowl.

In another bowl, mix together the mayonnaise, dill, parsley and the cream. Season to taste with salt and pepper.

Add chicken, ham, cucumber, onions and the dressing to the vegetables in the bowl and toss gently. Adjust the seasoning. Arrange the eggs on top and serve with fresh bread.
