Ingredients
1 | cucumber, peeled, halved, seeded and chopped into dices |
salt and freshly ground black pepper | |
225 | young carrots, diced |
340 g | firm potatoes, peeled and cubed |
240 g | young beetroot, peeled and cubed |
340 g | cooked chicken breast, diced |
225 g | ham, diced |
6 | spring onions, sliced |
240 ml | mayonnaise |
240 ml | sour cream |
1 tsp | dill |
1 tbsp | parsley |
4 | 4 hard boiled eggs, quartered |
Instructions
Heat 3 saucepans. Separately in each pan boil the carrots, potatoes and the beetroots until done. Drain and allow to cool. Tranfer all into a large bowl.In another bowl, mix together the mayonnaise, dill, parsley and the cream. Season to taste with salt and pepper.
Add chicken, ham, cucumber, onions and the dressing to the vegetables in the bowl and toss gently. Adjust the seasoning. Arrange the eggs on top and serve with fresh bread.
