Royally rich chocolate orange oreo cheesecake recipe details
Ingredients
For the base & topping: | |
150 g | Oreo cookies |
150 g | digestives |
100 g | butter |
1 tbsp | orange extract |
150 g | orange chocolate |
50 ml | milk |
For the Filling: | |
400 g | cream cheese |
250 g | ricotta |
150 ml | cream |
1 ½ tsp | orange extract |
100 g | Oreo cookies, crushed |
75 g | icing sugar |
1 sachet | powdered gelatine |
Instructions
Grease a “23” Spring form tin with butter.Base:
Make base by blitzing biscuits in food processor until fine. Melt the butter in a pan and add to biscuits along with orange extract, stir. Press and flatten biscuit mixture into the bottom of the spring form tin, making sure the mixture is level. Put the tin into the fridge to chill while preparing the filling.
Filling:
Mix the cheeses together in a bowl thoroughly with orange extract and icing sugar. Stir through crushed oreo’s. Heat cream until hot but not boiling, and whisk in powdered gelatine. Leave to cool for 5 minutes then stir through cheesecake filling, making sure that it fully incorporated. Pour over biscuit base and give the tin a little shake to level out the mixture, put back fridge to chill for 2 hours.
Topping:
Melt the chocolate in bowl over a pan of simmering water. Heat milk in microwave or stove until piping hot and stir though melted chocolate, this will help with the consistency of the chocolate making easier to spread over cheesecake. Leave to cool down for a few minutes. Open spring form tin to leave the cheesecake on tin base and then spread chocolate topping making an even coating. Chill for another hour or more. Serve in a slice fit for a queen and enjoy.
