Ingredients

400 g tomatoes, peeled and diced
1 small glass capers, drained
1  shallot, chopped
3  eggs
200 ml milk
8 slice(s) stale toast
4 slice(s) Cheddar cheese
4 slice(s) cooked ham
1 tbsp olive oil
2 tbsp wine vinegar
salt and pepper
nutmeg
2 tbsp butter

Instructions

In a pan heat the oil. Sauté the shallot until lucent. Add the tomatoes and the capers. Cook stirring for 2 minutes. Season to taste with vinegar, salt and pepper. Remove from the heat and allow to cool.

In a bowl whisk the eggs with the milk until smooth. Season with salt, pepper and nutmeg. Top half of the toasts with cheese and ham. Cover with the remaining toasts and press together gently. Turn the toasts in the egg mixture until well coated.

In a large pan heat the butter. Add the toasts and fry over medium heat on both sides until golden.

Serve with the tomato salsa.
