Ingredients
5 large | eggs, separated |
60 g | caster sugar |
30 g | plain flour |
25 g | cocoa powder |
1 tsp | vanilla extract |
4 tbsp | icing sugar |
240 ml | double cream, whipped |
1 ¼ tsp | rum extract, or 1 tbsp rum |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F.Sponge:Beat egg yolks with caster sugar until thick and smooth. Stir in flour, cocoa and vanilla. Beat until well mixed.
Beat egg whites in a clean bowl until stiff, but not dry. Fold gently into batter.
Butter a 15×8 inch, 37x20cm baking tray or Swiss roll tin. Line with baking parchment and butter well again. Dust lightly with half the icing sugar.
Pour batter into pan and spread evenly.
Bake for 15 minutes. Cool for 5 minutes and then turn out onto a clean lint-free cloth to cool. Remove lining after 10 minutes.
Filling:combine the cream, rum and sugar. Adjust to taste. Spread over cake evenly and roll from one of the longer sides into a log, using the cloth to assist. Rotate so that the seam is underneath. Sprinkle with remaining icing sugar. You may wish to chill slightly before serving.
Serve in slices. Will serve 8-12 with ease.
