Rolled stuffed breast of lamb recipe details
Ingredients
For the stuffing:
- 1 large red onion, finely chopped
- 3 clove(s) garlic, finely sliced
- 4 breadcrumbs
- 4 minced lamb
- 1 tbsp mixed herbs (thyme, rosemary, parsley)
- 1 large egg, well beaten
- salt and pepper
For the roast:
- 1 large breast of lamb, boned.
- salt and freshly ground black pepper
Instructions
Mix the stuffing ingredients in a bowl to make a moist but not wet stuffing.
Season the breast with salt and pepper and spread the stuffing over the surface of the boned breast.
Roll the breast up into as tight a roll as you can manage and tie it up with kitchen string.
Place the stuffed breast in a roasting tin and place in a hot oven (220°C, 425°F) for 20 minutes. Then turn the oven down to 190°C, 375°F and roast for a further 1 – 1 and a half hours or until tender.
Serve with roast potatoes, green vegetables and lamb gravy.
