Rocket salad with feta cheese and nuts recipe details
Ingredients
500 g | rocket leaves |
10 | basil leaves |
100 g | Feta cheese |
1 medium | onion |
1 tsp | sumac |
2 tbsp | pine nuts |
3 tbsp | extra virgin olive oil |
2 tbsp | pomegranate juice |
salt | |
1 pinch(es) | thyme, rubbed |
3 tbsp | walnuts, roughly chopped |
Instructions
Wash and pat dry the rocket and place into a bowl. Wash the basil, pat dry and pluck roughly. Add into the bowl. Cut the cheese into small cubes and sprinkle over the rocket. Peel and halve the onion and cut into thin slices. In a separate bowl mix onion and sumac, then add it to the rocket.Roast the pine nuts over medium heat for a minute in the olive oil. Spoon the pine nuts on top of the salad.
Mix the chilled oil from the skillet with the pomegranate juice, salt and thyme. Pour over the salad and toss gently. Sprinkle the walnuts on top and serve.
