Rob's perfect poppers recipe details
My dad always said the right tool makes the job go easier. In this case we will make use of an apple corer and a red brick to make the perfect popper. Please don’t waste your money on one of those expensive popper holders!

Ingredients
Serves: 2- 6 large jalapeno peppers
- 1 bratwurst or your favorite sausage
- 4 strips cooked bacon
- 1/2 cup shredded Cheddar or your favorite cheese
- Salt and pepper, to taste
Preparation method
Prep: 20 mins | Cook: 20 mins | Extra time: 5 mins, resting1. Place two red bricks in an oven or grill and preheat to 350 degrees F.
2. Cook the bacon and sausage while the oven heats up.
3. While the meat cooks, cut the tops off of the peppers and core them. Put the peppers in a bowl with a little water and nuke for 2-3 minutes (until you can smell them).
4. Pat the peppers dry and drain the grease from the meat. Allow to cool to room temperature. Mince the sausage and crumble the bacon.
5. Combine the meat and cheese in a small bowl. If you want additional heat you can also add in some of pepper pulp. Add salt and pepper to taste.
6. Stuff the peppers with the meat/cheese mixture. Pack them firmly.
7. Drop the stuffed peppers into the holes in the red bricks. Cook for five minutes and then top off with additional cheese if settling has occurred.
8. Peppers are done when cheese is melted…about 20 minutes total. Let rest for 5 minutes…they will be hot.Tip
The red brick allows the peppers and filling to cook evenly without burning. DO NOT use a metal holder.
TipSave the pepper core and add to the stuffing if you require additional heat.
