Ingredients

2 large red peppers, deseeded
1 tbsp olive oil
1 sachet red wine vinegar
1 clove(s) garlic, crushed
2 tbsp natural yoghurt
salt and freshly ground pepper, to taste

Instructions

Preheat the oven to 220°C.

Put the peppers into a roasting tin and sprinkle with oil. Bake for about 25 minutes, until the pepper is beginning to soften.

Put the peppers into a polythene bag and leave a few minutes so that the skins sweat off. Then rinse under a tap and scrape away any remaining skin.

Put the peppers, wine vinegar and garlic into a processor and blend until smooth.

Combine the pureed mixture with the yoghurt and adjust the seasoning.
