Roasted Red Pepper Sauce recipe

Ingredients
2 large | red peppers, deseeded |
1 tbsp | olive oil |
1 sachet | red wine vinegar |
1 clove(s) | garlic, crushed |
2 tbsp | natural yoghurt |
salt and freshly ground pepper, to taste |
Instructions
Preheat the oven to 220°C.Put the peppers into a roasting tin and sprinkle with oil. Bake for about 25 minutes, until the pepper is beginning to soften.
Put the peppers into a polythene bag and leave a few minutes so that the skins sweat off. Then rinse under a tap and scrape away any remaining skin.
Put the peppers, wine vinegar and garlic into a processor and blend until smooth.
Combine the pureed mixture with the yoghurt and adjust the seasoning.
