- Ingredients
- 2 whole chickens (roasters or fryers)
- 2 Tablespoons sage
- 2 Tablespoons oregano
- 2 teaspoons thyme, ground
- 2 Tablespoons rosemary, if desired
- 1 teaspoon granulated garlic
- 1 teaspoon coarse salt
- 1 teaspoon black pepper
Instructions:
One of the things we raised on my Grandmother Hart’s farm were chickens. This was one recipe that we enjoyed, and it was easy and quick, leaving time to get another chore done. Ellen M Morin, owner of Sundance Trail Guest Ranch
Combine spices/herbs and rub generous amount on inside and outside of chickens. Place in lightly oiled pan, cover with foil, and bake at 350 degrees for 2 hours. Remove foil for last 30 minutes. Carve and serve. Keeps 3 to 4 days.
Amount: Depending on size of chickens and appetites, you can get 3 to 5 servings per chicken. Sundance Trail Guest Ranch plans 3 people per chicken since appetites here at our Colorado dude ranch are healthy and always satisfied.
Serving Suggestion: Excellent with mashed potatoes and gravy.
