A hot, healthy vegetable side dish with great taste from Parmesan cheese and balsamic vinegar.

Ingredients
Serves: 4- 1 pound asparagus, trimmed
- 1 red bell pepper, sliced thinly
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 (1 ounce) chunk Parmesan cheese
- 1/4 teaspoon black pepper
Preparation method
Prep: 10 mins | Cook: 12 mins1. Preheat oven to 500 degrees F.
2. Toss asparagus and red bell pepper with oil in a bowl. Pour into a shallow lined baking pan and bake for 12 minutes, shaking the pan occasionally to keep the veggies from sticking. Place on platter.
3. Drizzle with vinegar, then shave the cheese in curls over the vegetables. Sprinkle black pepper over the dish and serve.
