Roast chicken with fennel and garlic sauce recipe details
Ingredients
1 ½ kg | chicken |
60 ml | olive oil |
90 ml | chicken broth |
240 ml | dry white wine |
2 tbsp | fresh tarragon |
2 tbsp | fresh rosemary |
2 tbsp | fresh marjoram |
2 tbsp | fresh thyme |
3 large | fennel bulbs |
10 clove(s) | garlic, peeled |
2 tbsp | fennel seeds, crushed |
2 medium | lemons, halved |
salt and pepper, to taste |
Instructions
Cook fennel in salted water until tender, about 8 minutess. Drain.Transfer cooked fennel to a bowl and mix in 2 tablespoons of olive oil, garlic cloves, 1 tablespoon fennel seeds, tarragon, rosemary, thyme and marjoram. Season to taste with salt and pepper.
Preheat oven to 200°C.
Rinse chicken and pat dry. Rub chicken with oil and lemon halves, squeezing some juice into cavities. Sprinkle with salt and pepper.
Tie legs together and place chicken, breast side down, in a large roasting pan and arrange fresh fennel mixture around chicken.
Roast chicken for 30 minutess, basting with pan juices after 15 minutes.
Combine wine and broth and pour over chicken. Continue to roast for further 50 minutes.
Pour pan juices into bowl and skim off fat. Pour juices over chicken and serve.
