Risotto with saffron recipe details
Ingredients
350 g | rice |
120 ml | dry white wine |
100 g | butter |
1 l | vegetable broth |
1 pinch(es) | saffron |
1 medium | onion, chopped |
6 tbsp | Parmesan cheese, grated |
Instructions
Melt the butter in a saucepan and sauté the onion. When the onion begins to get tender, add the rice and stir until it is lightly toasted and has absorbed the fat.Pour in the wine and let evaporate. Add a ladle of broth and let the rice absorb it, stirring constantly. Allow each ladleful of broth to be absorbed before adding the next one and carry on adding broth until the rice is done.
Dissolve the saffron in a little broth and add to the rice halfway through cooking, after about 6-7 minutes.
When the rice is done, remove from heat and mix in the remaining butter and the grated Parmesan cheese.
Stir the rice well until the ingredients are blended thoroughly and the risotto is smooth.
