Risotto with fresh rosemary recipe details
Ingredients
350 g | risotto rice, e.g. Arborio or Vialone |
1 l | chicken stock |
4 tbsp | oil |
1 | onion, chopped |
1 clove(s) | garlic, chopped |
10 sprig(s) | rosemary, finely chopped |
1 glass(es) | dry white wine |
50 g | freshly grated Parmesan cheese |
2 tbsp | butter |
Instructions
In a saucepan, heat the oil. Add the rosemary, onions and the garlic and cook stirring until lucent. Stir in the rice and cook stirring for another minute. Pour in the wine and cook until the liquid has evaporated.Add a ladle of stock and let the rice absorb it, stirring constantly. Allow each ladleful of stock to be absorbed before adding the next one and carry on adding stock until the rice is done.
Stir in the butter and the cheese and serve.
