Ingredients

300 g rice
1.4 l vegetable broth
140 g butter
140 g Cheddar cheese, grated
150 ml dry white wine
1 small onion, chopped
230 g raspberries
2 tsp thyme leaves, chopped
salt and pepper, to taste

Instructions

In a pan sauté the onion in the butter until translucent.

Add the rice and stir over a medium flame. Add the white wine and stir. When the wine is absorbed, slowly ladle in the broth every time the rice absorbs it. Stir from time to time, making sure that the rice does not stick to the bottom of the pan. This will take about 20 minutes.

After 15 minutes cooking time, add half of the raspberries and continue stirring. When the rice is ready, add the remaining butter, the cheese and the chopped thyme.

To serve, garnish with the remaining raspberries.
