Ricotta cheese dumplings with spinach recipe details
Ingredients
1 kg | spinach, fresh |
300 g | ricotta cheese |
1 | egg |
50 g | freshly grated Parmesan cheese |
salt and pepper | |
250 g | Béchamel sauce |
1 large can(s) | chopped tomatoes with their liquid, 400g |
1 pinch(es) | sugar |
Instructions
Remove the thick stems from the spinach, then wash, drain and blanch the spinach in salted water until wilted. Drain then squeeze the spinach and transfer into a bowl. Add the Ricotta, egg and 30g of the Parmesan cheese. Knead until well combined and season with salt and nutmeg.Preheat the oven to 180°C.
With damp hands, form small balls. Place the dumplings side by side in a large shallow casserole dish and drizzle each dumpling with some béchamel sauce. Season the tomatoes with salt, pepper and a pinch of sugar. Pour the tomato sauce in the space between the dumplings. Sprinkle with the remaining cheese.
Transfer the dish into the preheated oven and bake for 5-10 minutes until golden brown.
