Rice pudding with berries and mint recipe details
Ingredients
6 tbsp | coconut flakes |
750 ml | milk |
1 can(s) | coconut milk |
250 g | blueberries |
500 g | raspberries |
4 sprig(s) | mint, chopped |
1 pinch(es) | salt |
75 g | sugar, and 1 tbsp extra |
2 tsp | cornflour |
2 tsp | honey |
250 g | short grain rice |
Instructions
Toast the coconut flakes in a pan without oil until yellowish. Allow to cool.Bring the milk with a pinch of salt to a boil. Stir in the rice. Reduce the heat, cover and simmer for 25-30 minutes.
Stir in the coconut milk and 75g of the sugar and bring to the boil again. Take from heat.
In a saucepan, purée 400g of the raspberries with a tablespoon of sugar with a hand blender. Bring to a boil. Mix together the cornflour and some water and stir the mixture into the raspberry sauce. Cook for a minute, then take from heat and allow to cool a bit.
In a bowl, mix the honey with 2 teaspoons of warm water. Stir in the remaining berries and the mint.
Serve the rice pudding together with the berries and the raspberry sauce. Sprinkle with the coconut flakes.
