INGREDIENTS:

Makes 25

140g butter or margarine/shortening for vegetarian

60g caster sugar or icing sugar

160g all-purpose flour

1-1/2 tsp baking powder

1/4 tsp baking soda

1 tbsp milk powder or soy flour for vegetarian

50g ground almond

60g almond nips

METHOD:

  1. Cream together the fate and sugar until light and fluffy.

  2. Sift flour, baking powder, baking soda and milk powder. Fold flour mixture into batter.

  3. Sift icing sugar into dough and stir well. Finally, fold ground almond and almond nips into batter.

  4. Roll dough into 3cm diameter log. Wrap tightly in a plastic bag. Chill for at least 2 hours until firm.

  5. Preheat oven to 190 degC. Line baking tray with greaseproof paper. Cut the dough into 1cm thick slices. Place on the lined baking tray and bake for 10-15 minutes or until cooked.

  6. Transfer to wire rack to cool. Store in air tight container.
