Makes 25
140g butter or margarine/shortening for vegetarian
60g caster sugar or icing sugar
160g all-purpose flour
1-1/2 tsp baking powder
1/4 tsp baking soda
1 tbsp milk powder or soy flour for vegetarian
50g ground almond
60g almond nips
METHOD:
- Cream together the fate and sugar until light and fluffy.
- Sift flour, baking powder, baking soda and milk powder. Fold flour mixture into batter.
- Sift icing sugar into dough and stir well. Finally, fold ground almond and almond nips into batter.
- Roll dough into 3cm diameter log. Wrap tightly in a plastic bag. Chill for at least 2 hours until firm.
- Preheat oven to 190 degC. Line baking tray with greaseproof paper. Cut the dough into 1cm thick slices. Place on the lined baking tray and bake for 10-15 minutes or until cooked.
- Transfer to wire rack to cool. Store in air tight container.
