Red wine gravy recipe details
Ingredients
1 small | onion, chopped |
1 medium | carrot, peeled, chopped |
2 tbsp | olive oil |
300 ml | water |
1 tsp | yeast extract |
200 ml | red wine |
1 | bay leaf |
2 tsp | flour |
2 tsp | tomato puree |
1 pinch(es) | sugar |
1 ½ tsp | fresh mint, chopped |
Instructions
Sauté the onion in the oil until soft, stirring frequently. Add the carrot, boiling water, yeast extract, wine and bay leaf. Bring to a boil, then reduce heat and simmer, covered, for 15-20 minutes. Cool.Discard bay leaf, put mixture in a blender and process for 1 minute. Then strain through a fine sieve, add flour and sugar and blend again to incorporate the flour.
Return to the saucepan and add tomato puree and bring to the boil, stir frequently.
Simmer for 3-5 minutes until the sauce starts to thicken. Then add the mint and continue to cook for a further 30 seconds.
