Ingredients
150 g | flour |
60 g | sugar |
2 tsp | baking powder |
½ tsp | salt |
1 medium | egg, beaten |
120 ml | milk |
60 ml | vegetable oil |
150 g | red currants |
2 medium | bananas, mashed |
½ tsp | cinnamon, optional |
Instructions
Combine flour, sugar, baking powder, salt and cinnamon (if using) in a large bowl.
In a separate bowl, combine egg, milk and oil. Combine liquid mixture with dry ingredients, stirring just until moistened.
Gently stir in redcurrants.
Preheat oven to 200°C.
Spoon batter into greased muffin pans. Bake for 20-25 minutes. Remove muffins frm pans immediately.
