Ingredients
450 g | red currants, pulled of their stems, rinsed |
zest of two oranges, grated | |
4 tbsp | butter, unsalted |
200 g | sugar |
60 ml | vegetable oil |
2 large | eggs |
1 tbsp | baking powder |
270 g | cake flour |
240 ml | milk |
Instructions
Grease sides and bottom of a cake pan. Preheat oven to 180°C.
In a bol cream together butter and sugar. Mix in the oil, add the eggs and mix until smooth.
Add the baking powder and 90g flour. When well combined, add 120ml milk, another 90g flour, the remaining milk, and the rest of the flour, mixing well after each addition.
Fold in the currants and orange zest. Pour the batter into the prepared pan and bake until golden brown, about 50 minutes.
Cool on rack. Serve with lightly whipped cream.
